Les Ingrédients

​1 tbsp olive oil

1 tbsp coconut oil

1 clove of garlic

1 tsp ginger

1 tbsp soy sauce/tamari

5 button mushrooms

handful of spinach

cup of brocolli

medium sweet potato

black pepper

sea salt

Optional:

1 tbsp nutritional yeast

1 tsp turmeric

Eggs' Rival 

After a recent night of drinking and post-party pizza, I woke up craving...vegetables. So if you want to feel slightly less shitty about the state of your body after a night out and aren't feeling the standard egg move, try this out. It's healthy, easy, and takes like ten minutes to make.

How to Make It 

Turn the oven to 400 degrees Fahrenheit onto 'bake'. Then chop up a medium-sized sweet potato into cubes and assemble them onto a baking pan. Next, pour a large dollop of olive oil over the potato pieces and use your hands to evenly coat them. Finally, throw some sea salt and pepper over the lot. (Sometimes, I add thyme, nutritional yeast, and a tidbit of turmeric too.)

How to Make It  /  Greens x Mushrooms x Spices

Chop up garlic and ginger into tiny pieces. Then, slice up five small mushrooms. Put everything into a medium sized pan and cook with a tablespoon of coconut oil until the mushrooms are nice and browned. Then, use a spatula to pour the mixture out and put it on a plate.

Reuse the same pan and throw a small handful of broccoli in (make sure the pieces are approximately equal size so they'll cook evenly.) Pour some water into the pan just so that it's about a quarter of an inch high. Turn the heat on to the highest heat and steam the broccoli for about 5-10 minutes.

When the broccoli is done, drain it in a colander. Then put it back into the pan with the mushroom mixture along with a handful of spinach. Squeeze half a lemon's juice into the pan and a tablespoon of soy sauce/tamari (feel free to add more.) Cook it all until the spinach has wilted.

Enjoy and crawl back to bed.
